Z Family Fish Soup

Olive Oil
(1) tbs fennel Seed
(1) pinch crushed saffron
(2) Carrots - Diced
(2) Celery Stalks – Diced
(2) Garlic Cloves – Finely Chopped
(2) Leeks – Thinly sliced
(1) Lrg can of crushed tomatoes
(4-6) cups of fish stock
(1) lb Swordfish or equivalent
(½) lb peeled raw shrimp
(½) lb Mussels
(½)  lb clams
Salt and pepper to taste

1.In a large sauce pan heat olive oil, add in fennel, garlic, carrots and celery and cook for 5 – 10 min until veggies soften.  
2.Add leeks, tomato, broth and bring to a boil.  
3.Cover, and simmer for 15 minutes.
4.Add the fish, then the shrimp, once cooked add the mussels and clams and cook until they open completely.  

Note:  you can add any other seafood you might like squid, octopus, crab or even omit any of the seafood… use what you got and what you like.
